Apple Cake

One word; yum. This Apple Cake is perfect. It is light, fluffy, and just the perfect amount of sweet. I know this Apple Cake will delight everyone who tries it.


  • 225g Ghee

  • 1 cup raw sugar

  • 4 eggs

  • 3 cups Self Raising Lupin Flour

  • 1 teaspoon cinnamon

  • ½ cup coconut yoghurt

  • 3-4 Granny Smith Apples – peeled & sliced



  • Preheat oven to 180° C

  • Line a 20cm x 20cm square cake tin with baking paper

  • Cream ghee & sugar

  • Add eggs 1 at a time

  • Gradually add flour & cinnamon, then add yoghurt

  • Fold in 2/3 of the apples

  • Pour batter into prepared pan & top with remaining apples along with a good splash of cinnamon

  • Bake for approx. 20 minutes until golden on top & a skewer inserted comes out clean

  • Allow cake to cool for 5 minutes before turning out onto cake cooling rack
