Lupin battered fish that is absolutely delicious
We love taking a trip to a local coast town to have fish and chips.
The thing is that it is an hours drive away & we're still busy at this time of the year. Robert is working 7 days a week & a trip to go have fish & chips for dinner really wasn't possible.
So I decided to have a play with some of our lupin flour to create a batter & make our own homemade fish & chips.
This recipe turned out so lovely & light, it's not a really solid batter on the fish. The colouring is so lovely and golden too, this is a fabulous feature of the lupin flour.
LUPIN BATTERED FISH
YOU WILL NEED
Fish to batter
½ cup Wholemeal Lupin Flour
½ cup Self Raising Lupin Flour
1 teaspoon baking soda
1 teaspoon salt
½ cup milk (I use almond, cows milk will work)
1 cup water
extra flour for dusting
Oil for frying
NOW WHIP IT UP
Heat oil to around 180° C
Combine flours, baking soda & salt
Add milk & water
Whisk all lumps out
Toss fish in flour to coat
Dunk fish into batter mix
Fry fish in oil till golden
