Chocolate Chip Almond Cookies
These are a deliciously nutty cookie with decadent chocolate chips & nutritious flaked lupins, making them just the right amount of everthing!
YOU WILL NEED
1 cup almond butter (or any nut butter)
1 cup rapadura sugar
1/3 cup My Provincial Kitchen Flaked Lupins
1 egg – whisked
½ cup cocoa
1 teaspoon baking soda
1 teaspoon vanilla
pinch salt
chocolate chips (up to ½ cup)
NOW WHIP IT UP
Preheat oven to 180 ° Celcius
Line a cookie tray with baking paper
In a large mixing bowl add almond butter & sugar, beat on medium to high with electric beaters until well combined
Add ¼ c cocoa & mix well. Add the other ¼ c cocoa & mix together until all cocoa is incorporated
Add flaked lupins, baking soda, vanilla, salt & choc chips, mix well
Scoop spoonfuls onto tray & slightly flatten them
Bake for approx. 10 mins
These will firm as they cool
