Oh my; chocolate sultana slice you melt my heart
Don't you love it when you find a food that just makes your heart sing? Well this recipe used to do that for me, that was until I was unable to eat dairy & needed to reduce my gluten as well. I had to put this on the back burner while I dealt with my health.
I finally had the chance to convert it to being both dairy & gluten free & while it isn't exactly the same, it is pretty damn close & again my heart is humming away.
CHOC SULTANA SLICE
YOU WILL NEED
80g Coconut oil – MUST BE FIRM but not solid
3/4 cup Rapadura sugar
30g Dark chocolate – melted
1/4 cup coconut cream
1 cup Self Raising Lupin Flour
1/4 cup Cocoa
1 cup Sultanas
3 Eggs
NOW WHIP IT UP
Preheat oven to 180° C (fan forced)
Cream coconut oil until it lightens in texture
Add sugar, in small amounts at a time, beat well after each addition, be careful not to add too much sugar at one time
Add eggs & beat till well combined
Add lupin flour, cocoa, coconut cream & chocolate, mix well
Fold in sultanas
Bake for approx. 20 mins
* This is best fresh straight out of the oven
* We love to devour this with some coconut yoghurt or ice cream
*If you are able to tolerate dairy you can replace the coconut oil with 100g butter & use 2 eggs (not 3)

Do you have an online store, also is there much difference cooking with wheat flour as opposed to lupin, i always use spelt, i have no allergies, have curious to know and give lupin a go. Thanks
