Chocolate walnut cake
I love searching the internet for new recipes & then converting them to be dairy free as well as including our lupin flour. This recipe is based on one that I found on the Pure Harvest website.
YOU WILL NEED
DRY INGREDIENTS:
1 1/2 cup Self Raising lupin flour
1/3 cup cocoa
3/4 cup rapadura sugar
1/2 cup walnuts
pinch salt
WET INGREDIENTS:
1/2 cup + 2 tablespoons milk
1/4 cup coconut oil - melted & cooled
1 teaspoon apple cider vinegar
1/3 cup natural coconut yoghurt
1/4 cup maple syrup
NOW WHIP IT UP
Preheat oven to 170° celcius
Line loaf pan with baking paper
Sift dry ingredients into a bowl
Add wet ingredients to dry
Mix well to combine all ingredients
Bake for approx 30 minutes, until a skewer inserted comes out clean
Cool on wire rack
Can be iced & topped with walnuts, or enjoyed as is
