Flaked Lupin Granola
I have created this recipe using a few of my favourite products. I've really wanted to make a delicious granola & I feel like I've hit this nail right on the head, with the family even singing it praises! I know you will love it as well.
YOU WILL NEED
½ c walnuts
½ c almonds
½ c cashews
½ c My Provincial Kitchen Flaked Lupins
¼ c pumpkin seeds
¼ c sunflower seeds
½ c coconut flakes
¼ c coconut oil
¼ c maple syrup
1 teaspoon vanilla
2 teaspoons cinnamon
pinch salt
dried fruit & choc chips (as desired)
NOW WHIP IT UP
Preheat oven to 140 °
Line a baking tray with baking paper
Add walnuts, almonds, cashews & coconut to food processor & pulse for approx. 15 seconds – do not over blend
In a pot, combine coconut oil, maple syrup, vanilla, cinnamon & salt, bring to the boil, simmer for approx. 3 minutes
In a large mixing bowl add seeds, flaked lupins & blended nuts, stir to combine
Pour melted ingredients over combined nuts & stir to coat all ingredients
Spread out evenly on baking tray & bake in the oven for approx. 20 minutes, until golden brown
Remove from oven to cool. If you are adding dried fruit, now is the time to press it into the granola. If you are adding choc chips, allow it to cool a little more so the chocolate doesn’t melt
Once cool, break up & store in an airtight container for up to 2 weeks
