Lupin Afghans by Kelsi from The Gluten Free Maize

Kelsi from The Gluten Free Maize loves using our mixes to make family favourites & she has shared another fabulous recipe with us.  This one is a gluten free Afghan biscuit recipe using our Anzac biscuit mix.

GF Afghan Biscuits

A true New Zealand classic biscuit. Normally you would pop a walnut on top as well, I've left it off here today.  Boy do they live up to the real deal with the help of My Provincial Kitchen lupin mixes.

 

Gluten Free Lupin Afghan biscuits

YOU WILL NEED

75g butter melted
2 tablespoons brown sugar
2 tablespoons cocoa
1 cup gluten free cornflakes 
1 packet of My Provincial Kitchen Anzac biscuit mix
60g Maple syrup
40g coconut oil
1/4 cup wholemeal lupin flour
Chocolate drops
Nestle caramel

 

NOW WHIP IT UP

Preheat oven to 170°
Line tray with baking paper
Melt maple syrup, coconut oil & water together
Pour biscuit mix into bowl & add melted liquid ingredients
Add brown sugar, gluten free cornflakes, melted butter, lupin flour & cocoa and mix
Roll into balls and flatten with a fork
Cook for 15-18min and or until golden, remove from oven & allow to cool
Once cooled, add a spoon of caramel on top
Melt chocolate (150g on average 2-4min in the microwave) and drizzle over caramel, making sure it’s completely covered and add walnut
Easy done
