Lupin Anzac Hedgehog - Vegan
Our family absolutely loves hedgehog & it's something that I have struggled to recreate with quality ingredients
That was until I thought about using our Anzac biscuit mix . You need to make the biscuits first, then crush them & add the other ingredients, set in the fridge & then top with some delicious chocolate. This is rich, decadent & delicious
YOU WILL NEED
TO MAKE BISCUITS:
1 pack Anzac Biscuit mix
60g maple syrup (golden syrup, rice malt syrup or honey)
40g coconut oil (butter, canola or vegetable oil)
20g water
TO MAKE SLICE:
12 Anzac biscuits (previously made)
1/4 cup cocoa
100g good quality dark chocolate
60g maple syrup
60g coconut oil
1/3 cup walnuts (chopped into pieces)
1/3 cup sultanas
1/4 cup desiccated coconut
TOPPING:
100g good quality dark chocolate
NOW WHIP IT UP
BISCUITS (follow instructions on back of pack)
Preheat oven to 170°
Line tray with baking paper
Melt maple syrup, coconut oil & water together
Pour biscuit mix into bowl & add melted liquid ingredients
Using damp hands, roll dessert spoonful balls & place on lined tray, press slightly with fork
Bake for 15-18 minutes
Remove from oven, leave on tray to cool & harden
SLICE:
Line slice tray with baking paper
Crush biscuits into crumbs
Place biscuit crumbs, cocoa, coconut, walnuts, sultanas in a medium sized bowl
Melt coconut oil, maple syrup & chocolate
Pour melted liquid into dry ingredients
Mix until well combined
Pour mixture into prepared slice tray & press down well
Place in refrigerator until firm
TOPPING:
Melt chocolate & pour over firm slice
Place back in refrigerator to set chocolate
Once everything is set, remove from fridge, cut into squares & devour with a cup of tea.

Made the hedgehog slice, mine was a bit crumbly and I needed more than 100g of Chocolate to top it properly. First time so hopefully next time will be better 😬😉
I cut/broke into small pieces as it is very sweet😋. Just thinking I did remove it from the slice tray first maybe next time slice it whilst still in the tray 🤔 But do like small pieces when sweet, I am GF and doing keto so I used macadamia nuts cause I like them, a little too sweet for keto but yum 😋
