Lupin Banana Pancakes by Jess from The Gut Project
Jess from The Gut Project created this fabulous banana pancake recipe using a combination of our wholemeal and self raising lupin flours. This recipe is great because it is gluten free, dairy free & refined sugar free.
YOU WILL NEED
Dry Ingredients:
1 cup Lupin self raising flour
1 cup Lupin wholemeal flour
2 tbsp xylitol
2 tbsp almond meal
2 tbsp rice flour
1/4 tsp baking powder
Wet ingredients:
1 cup of Almond milk
3 mashed bananas
1 whisked egg
Coconut oil for frying
NOW WHIP IT UP
Combine all dry ingredients in a mixing bowl and mix well
In another bowl mash the bananas and add plant based milk and egg
Combine wet and dry ingredients and mix well
Heat 1 tbsp coconut oil in a frying pan and scoop a tablespoon of mixture onto the hot oil in the size pancake that you like (I made 2 per pan)
Whilst cooking, shape and flatten the pancake mix with a spoon.
Check underside and when it is browned flip the pancakes and cook for a further 30-60 seconds before removing from heat
Repeat step 4 for each lot of pancakes
