Lupin carrot cake deliciousness
Carrot cake is one that I personally have never liked, the thing is that my family LOVES it. I have 2 recipes that I make, one of our children likes a basic carrot cake with not too many 'bits' in it & everyone else loves a more full carrot cake.
Today I'm going to share with you the recipe with the 'more' in it. I do love making this because I love the expression on their faces when they eat it, it's absolute bliss.
CARROT CAKE
YOU WILL NEED
3t cinnamon
½ t bi-carb soda
200g rapadura sugar
5 eggs
250ml macadamia oil
Zest from 1 orange
Zest from 1 lemon
250g finely grated carrots
100g chopped walnuts
50g chopped pecans
250g diced pineapple
1 Tablespoon of pineapple juice
NOW WHIP IT UP
Preheat oven to 150 ° (fan forced)
Sift dry ingredients & stir in sugar, make a well in the centre
Beat eggs with oil & zests, add pineapple juice
Stir carrots into wet mix
Fold wet into dry ingredients
Fold in nuts & pineapple
Cook for approx. 1hr 20 mins, until a skewer inserted comes out clean
The family love to have a bit of icing on this cake, so I make up a cashew buttercream icing.
