Lupin Donuts

Don't you love it when you find different ways to use the one product?  Well we have used our Lupin Pancake mix to make both sweet & savoury pancakes, then I've used the left overs pancakes to make a bread & butter pudding.  Then I got thinking, I wonder if I could make donuts with it?

I gave it a go & it turned out an absolute treat.  They're light, fluffy & delicious.

Here's a video to show you how I make our lupin donuts.  Recipe & instructions below.

1 egg
1 cup milk
200g lupin 🌱 pancake 🥞 mix (half packet)

OR I use to make a full packet and have some left over for pancakes 🥞 tomorrow morning
2 eggs
2 cups milk
400g lupin 🌱 pancake 🥞 mix (full packet)

Preheat oven to 170 degrees Celsius
Add your egg and milk to a bowl and whisk
Add pancake mix and whisk to combine well
Grease donut tray
Pour batter into tray
Place in oven approx 10 minutes

While donuts are cooking
3/4 cup raw sugar
1 dessert spoon cinnamon
Stir to combine

Melt approx 1/2 cup butter

When donuts are cooked, remove from pan while hot and quickly dunk in hot butter then cinnamon sugar

This will make around 8 donuts 🍩 if you fill the pan to the top, or 16 hand filled

Devour to your hearts content 😍
