Lupin Pizza Base
This delicious Pizza Base was created by the wonderful Jess at @the.gut.project
YOU WILL NEED
- 130g MPK wholemeal lupin flour
- 20ml Extra Virgin Olive Oil
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp lemon juice (fresh)
- 135mL room temp water
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 egg, whisked
- Coconut flour for rolling
- Pink Himalayan salt
NOW WHIP IT UP
Preheat oven to 180 degrees celsius (fan forced).
Sift flour into mixing bowl.
Add all ingredients except for egg and coconut flour into the bowl. Ensure that lemon is squeezed on top of the baking soda (it will bubble).
Gently fold ingredients in to combine.
Add whisked egg and gently fold egg in.
Sprinkle clean bench top with coconut flour and place dough mixture onto benchtop. Begin kneading and rolling the dough, adding more coconut flour if necessary. The dough should resemble normal pizza dough and have a similar texture.
Line a baking tray with paper and a drizzle of oil.
Flatten the dough onto the baking paper and form a circular base approximately 0.5cm thick. 9. Bake for 10-12 mins or until base has browned and crisped.
