Peach Cobbler

This delicious Peach Cobbler serves 6 people.



1kg peaches (either canned or fresh)

3/4 cup My Provincial Kitchen Wholemeal Lupin Flour

1/2 cup My Provincial Kitchen Flaked Lupins

1/2 tsp ground cinnamon

Juice of 1/2 lemon

1 tsp cornflour

1/2 tsp baking powder

1/2 cup desiccated coconut

100g almonds (raw or roasted)

3 tbsp pure maple syrup

3 tbsp coconut oil, melted

Pinch of Pink Himalayan Salt

2 tsp xylitol (option, for topping)


Preheat oven to 180 degrees celsius (fan forced). 
Spray a rectangle glass baking tray (27x17cm) with oil. 
Spread peaches evenly in the baking tray and drizzle with lemon juice and cornflour. Mix well.
Add lupin flour, lupin flakes, cinnamon, baking powder, coconut, almonds, maple syrup, coconut oil and salt to a food processor and combine well into a crumble mix.
Spread the crumble mix evenly over the peaches. 
Drizzle crumble with xylitol or powdered sweetener (optional). 
Bake for 30 minutes or until crumble is browned and crispy.

    Serving ideas: serve warm with coconut yoghurt

    • Hi Fiona, this recipe isn’t one of ours, but I imagine you could use some extra flaked lupins to replace the coconut.

    • What can replace the coconut in the dry ingredients? Thanks.
