Savoury Lupin Muffin
Our Lupin Savoury Muffins are filling, tasty & oh so easy to make. They’re great for a meal or made into mini muffins for a healthy snack. With tomato, capsicum, onion & garlic they’re packed with flavour to satisfy your taste-buds. Plus they include spinach, so you'll feel good about your family having some extra greens.
YOU WILL NEED
2 Eggs- lightly beaten
130g Water
1c Grated Cheese (or dairy free alternative)
60ml Olive Oil
140ml Milk (of your choice)
NOW WHIP IT UP
Line a 12 hole muffin tray with muffin wrappers or grease appropriately
Preheat oven to 180°C (fan forced
Combine Eggs, Water, Cheese, Oil & Milk in a medium sized mixing bowl. Mix together
Pour in muffin premix & mix well to combine
Now give it another good mix to make sure the flours are active.
Scoop spoonful's of batter into prepared muffin tray (approx 3/4 full per muffin wrapper)
Bake for 15 minutes until lightly brown
Remove from oven and cool in tray for 5 minutes before turning onto wire cooling rack.
Store in airtight container, OR EAT THE LOT!
