Chewy Apricot Lupin Slice

MPK recipes are ones that have been handed down through the generations of our family & they've been converted to Gluten Free and to include Lupin Flour. I don't proclaim to create recipes, I convert them :)
Today I'm sharing with you a recipe that a friend gave to me a few years ago. I have converted it to include our Wholemeal Lupin Flour & swapped out rolled oats for flaked quinoa.
 

CHEWY APRICOT LUPIN SLICE

 

YOU WILL NEED

½ c almond meal
¾ c quinoa flakes
2 small eggs
¾ c rapadura sugar (or any sugar that you usually use)
1 teaspoon baking soda
½ c desiccated coconut
½ c dried apricots – chopped
115 g coconut oil
1 Tablespoon honey
 

NOW WHIP IT UP

 
1. Preheat oven to 180 (fan forced or standard)
2. Line 20cm x 30cm slice tray with baking paper
3. Melt oil & honey together, set aside to cool
4. Light beat eggs
5. Combine all dry ingredients incl apricots & mix well
6. Add egg & stir to combine
7. Add cooled oil & honey, stir to combine well
8. Place in prepared slice tray & press down firmly
9. Bake at 180 for approx. 25 mins until golden brown
10. Cool on a wire rack & store in an airtight container
