Lupin popcorn cookies

I love being able to include lupin flour in recipes that don't have it already and I love to do this with our Self Raising Lupin Flour.

This recipe is one from the incredibly talented Lisa Corduff .  I made them to Lisa's recipe & thought, hmmmmm I could add some lupin to that.  I do love the ingredients Lisa has used because they are all things I have in my pantry or fridge.  They're basic, but when you put them all together, they can create magic.  

Now, I call these popcorn cookies, because I think the taste reminds me of popcorn, I think it's the linseed, mind you I did think the lupin mill smelt like popcorn the other day when we were milling some fresh lupin flour, so who knows.

Here's my version 

POPCORN COOKIES

YOU WILL NEED

1 ¼ c Self Raising Lupin Flour

¼ c crushed linseed

¼ c almond meal

½ teaspoon bi-carb soda

¼ teaspoon salt

1/3 c maple syrup

1/3 c coconut oil

1 teaspoon vanilla extract

40g choc chips

 

NOW WHIP IT UP

Preheat your oven to 170 °C

Line a baking tray (cookie sheet) with baking paper

Melt coconut oil & maple syrup & set aside to cool a little

Using an electric mixer combine flour, linseed, almond meal, bi-carb & salt in mixing bowl & mix well

Add melted oil & syrup, then vanilla

Mix well

Add choc chips & mix together

Roll spoonfulls into balls & place on baking tray

Flatten slightly with fork & bake for approx. 10-12 mins till the bottoms are golden
